I bought pickled cactus at a Mexican shop the other day here in Utrecht. It's kind of slimy (doesn't sound very attractive eh, Heather?), but once I started, I just couldn't stop eating... Goes especially well with beer :)
Now I'm curious about jelly and ice cream of these lovely red things...
